The United States Department of Agriculture through its agency National Institute of Food and Agriculture published
Agriculture Information Bulletin No. 539 titled Complete Guide to Home Canning. The e-book is available for download and provides a very comprehensive resource. It further sets the guidelines to ensure health and safety standards in processing meat, poultry, fish, fruits and vegetables without the use of chemical or synthetic preservatives. Pressure canned processed foods can be stored for two years without refrigeration, provided that proper storage conditions are observed. It is recommended that jars and cans be stored in a cool dry place away from direct sunlight.
